I just made these, and they are good but a little eggy. I am wondering if I followed the correct recipe. A lot of the comments are talking about arrowroot powder and protein powder, but I dont see that in this recipe. Is there a different recipe somewhere, or additions to this one?

I have been making these muffins with this recipe at least a year now. My hubby and kid like them alot. Anytime I buy bananas and they dont all get eaten, I make these muffins. It’s a great recipe.

Yes, they freeze well. You can set one out to defrost each day, or microwave for just a few seconds.

These are my go-to for a healthy morning breakfast. Sometimes I’ll add vegan protein powder to help feel fuller or fruit or chocolate chips for a fun kick. I’ve been prepping a dozen of them at a time and eating them over the course of the week. I’ve noticed, however, that about mid-week they begin to smell a little funny even if I store them in the fridge. Almost like strange cheese. Haha. Any suggestions? Do you think they’ll freeze well? I really really love having these in the morning.

My 16 month old son is being tested for an egg allergy and right now as part of the introduction protocol we’ve been told to give him baked goods containing eggs 2-3 tines a week. We don’t eat grains or sugar and are mainly Paleo so I’ve never given my son muffins etc as part of his diet (even egg free baked goods). I’m going to try this recipe but could you also point me in the direction of other, perhap savory, grain and sugar free recipess containng eggs that are baked in a batter type way that I can incorporate into his diet while still keeping him healthy? We’re not able to do full baked eggs in bacon yet, if all goes well pure egg will be tested in 6 months. Thanks so much, Anna.
